Checking in

Hello! I'm still here, not much to report from this side of the country... Any weight I thought I had lost found me again (must be I don't hide so well...) so I'm pretty much back to square... oh, I don't know, I might not be all the way back to square one, so maybe I'm at square 2 or 3, but I'm not as far as I was before anyway. It's a bummer, but it's also normal for me. I just try to lose a few pounds and stay at that weight long enough for it to become my "normal" weight, and go from there... it just never sticks as my new normal! LOL I'm not sure what I'm doing wrong, exactly, but I'm sure I must not be doing enough right just yet. But the weather's getting warmer, and hope springs eternal!!

Great news Tammy! What colors are you choosing for your new yarn?? Do you have a project in mind for it???

Good to hear from you, Joyce - just keep hanging in there! Not much else you can do right now, I'm sure.

I've still got you both in my prayers...

Weigh-in-Wednesday..........


Yep…. today is ………… Weigh-in-Wednesday.
Well… I can say I’ve lost an additional 3 lbs now. Giving me a total of 6 lbs! *whew*
How’s everyone else doing? Any movement since you last posted?
Aunt Joycie… you can bet prayers are being said for Aunt Rainy! Bless her heart… what a thing to go through!
Wow… healthy meals delivered huh? Now that’s awesome! Just what you need!
Melani… where ya at hon? Pop in and give us and update!
Hope to see others pop in too…. Sure makes it more fun to have others cheering you along as you try to lose a pound of weight to gain a pound of yarn J

Okay… I’m off… I have a sick midget to tend to. I’m not feelin’ so great either … but I’m hangin’ tough! Darn ‘bugs’ that are going around now with all the weather change.

Sunday Morning

Good Morning....I want to let you know I'm holding my own, haven't lost or gained any weight, but thats ok with me for now I'm still trying to get the kidney thing under control making little head way but thats ok too. My sister in Michigan is in real bad shape, first in Oct she found out she had cancer in her one lung, and they were treating her for it. but her platelets in her blood isn't high enough to do chemotherapy. Last Sunday at church they had to call the rescue squad to take her to Midland Hospital, there they found cancer in the brain, and thought they could do surgery on it Weds. but now they found its all over the brain. and will try radiation for 10 days.
I did start something new for me this last week though I call the senior center and I'm not having meals delivered to me at noon everyday, this meal is low sodium and low fat, it includes a main dish, 2 veggie, fruit, and milk oh ya a roll and butter! They are very good.
I miss hearing from all of you and hope your doing ok..

Better-than-ever beef enchiladas.........



1/2 lb. extra lean ground beef
1/2 cup chopped green peppers
1/2 cup chopped red peppers
2 cups TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa, divided
1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided
2 Tbsp. KRAFT Light Zesty Italian Dressing
8 corn tortillas (6 inch)
2 Tbsp. chopped fresh cilantro
HEAT oven to 400°F. Brown meat with peppers in large nonstick skillet. Stir in 1 cup salsa; simmer 5 min., stirring occasionally. Remove from heat; stir in 1/2 cup cheese.
SPREAD 1/4 cup of remaining salsa onto bottom of 13x9-inch baking dish. Brush dressing lightly over both sides of tortillas. Stack 4 tortillas; wrap in large sheet of waxed paper. Microwave on HIGH 20 to 30 sec. or just until warmed. Immediately spoon 1/3 cup meat mixture down center of each warm tortilla; roll up. Place, seam-side down, over salsa in dish. Repeat with remaining tortillas and meat mixture; top with remaining salsa. Cover with foil.
BAKE 20 min. or until heated through. Uncover; top with remaining cheese. Bake 2 to 3 min. or until cheese is melted. Top with cilantro

Thankful Thursday..................

Okay kids................. here we go!
Time to do some positive thinking here...............and its easier to do it when you are reminded of how blessed you are!
